The Healthy Burger
Very natural, very healthy and easy to do. The best of two worlds!
Preparation Time: 20 mins; Serves: 1
Ingredients:
Burger:
- 200g / 0,4lb ground beef
- 1/4 medium-sized onion minced
- 2-3 prunes minced
- 1/2 handful rocket salad
- salt
Side Dish:
- 45g / 1,5oz blue cheese for topping
- 3-5 medium broccoli flower heads
- 1 carrot
- 1 beetroot
- 1/2 handful rocket salad
- drizzle of olive oil & balsamic vinegar
Steps:
- Mix all burger ingredients together, form a patty and cook it thoroughly till 72C / 162F.
- Grate carrot and beetroot, setting aside in a bowl.
- Wash broccoli and microwave it for 2 minutes or blanch it for 3-4 minutes. Then drizzle some olive oil right away – it will absorb it, adding to the flavor.
- Use the microwave to melt the cheese and pour it on the burger, while adding broccoli, grated carrots, beetroot and rocket salad.
- Another drizzle of extra virgin olive oil and balsamic vinegar and it’s all ready!
Delish Burger With Creamy Mascarpone Sauce
Mascarpone really helps to bring already awesome burger to the next level. Yeah!
Preparation Time: 20 mins; Serves: 1
Ingredients:
- 200g / 0,5lb ground beef
- 6 prunes minced
- 1 small bowl of spinach chopped
- 1/2 medium red onion minced
- 1 tbsp mascarpone
- olive oil
- salt
Steps:
- Mix onion, spinach and prunes together.
- Set aside one half of that mix.
- Combine ground beef with one of those halves, add some salt and make a patty.
- Cook the patty thoroughly until 72C / 162F on the inside. Reduce the pan heat.
- Once it has slightly cooled down, add a bit of olive oil, adding the second half of the mix.
- Saute for ~3 minutes, so they all soften up a bit.
- Then mix it all with mascarpone.
- Use the thing as a spread on top of the burger!
Real Cool & Easy Burger With Yam Topping
Real easy, real quick and real delicious. Nothing much to add to one of the easy beef burgers recipes – genius is in simplicity J.
Preparation Time: 15 mins; Serves: 1
Ingredients:
Burger:
- 200g / 0,9lb ground beef
- olive oil
- salt
Topping:
- 1/3 cupful mint
- 1 medium yam / sweet potato
- 1/3 glass coconut milk
Steps:
- Start by slicing the yam in two parts.
- Cover them with cling film and microwave them for five minutes – it should be enough to cook them through.
- Let them cool down.
- Meantime add some salt to ground beef and make two even patties.
- Cook them thoroughly until 72C / 162F on the inside.
- Extract “yam meat” with a teaspoon (it will be very easy to do).
- Mix it with coconut milk.
- Use as spread or topping, while adding some chopped mint right on top.
Tahini Beef Burger
Tahini (originally called Thina) is the new passion of mine. I invite you to try it yourself!
Preparation Time: 5 mins; Serves 2-3
Ingredients:
Burger:
- 200g / 0,4lb ground beef
- 1/4 medium-sized onion minced
- 1/2 handful spinach leaves chopped
- salt
Tahini Sauce:
- 1 lime juice
- 1 garlic clove
- 1/2 cup mixed nuts
- 1/4 cup tahini
- 1/4 cup water
- salt to taste
Steps:
- Combine all burger ingredients, make a patty and cook burger thoroughly until 72C / 162F on the inside.
- Blend all the sauce ingredients in food processor, so it resembles the sauce.
- Refrigerate for 20 minutes to help the flavor blend together (that’s optional).
- Spread on top of steak or burger and even use it as salad dressing!
