What Is New York Strip & How Do You Cook It
Unlike tougher and beefier cuts like flat iron and chuck, this steak is relatively tender and juicy. It comes from the loin area which doesn’t do much work during the animal’s lifetime – hence it’s relative tenderness.
Now that we know it’s already soft and doesn’t have limitless flavor, we need to use our cooking methods carefully so to preserve the good things and avoid the bad things.
The preparation techniques with this steak will go around dry heat methods (e.g. grilling). However we will also use low and slow cooking methods, such as sous vide, to really build up the flavor!

How To Cut NY Steak For Cooking
A tender steak like this can be quite thick, when it comes to cooking it at high heat for a short period of time. Anything between 3/4 of an inch, up to 2 inches, depending on how you are cooking it, is ideal.
Marinate is a good friend of this cut, so use it and see our guide for some ideas. Dry rubs are also good, but don’t overdo any of these ‘additions’ – real meat equals real flavor!
